- 1 ¾ cups (220g) all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) packed brown sugar
- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (120g) whole almonds, toasted and chopped
- 1 cup (175g) semi-sweet chocolate chips
- Optional: ½ cup chopped dried cherries or cranberries
Instructions
- Preheat oven to 350°F (175°C). Spread whole almonds on a baking sheet and toast for 8-10 minutes, stirring halfway through. Let cool and chop roughly.
- In a medium bowl, sift together flour, baking soda, and salt. Stir in shredded coconut and chopped almonds.
- In a large bowl, cream softened butter with brown sugar and granulated sugar using an electric mixer or whisk until fluffy and lighter in color, about 3-4 minutes.
- Beat in the egg and vanilla extract until just combined.
- Gradually fold the dry ingredients into the wet mixture with a spatula until no flour is visible. Avoid overmixing.
- Gently fold in chocolate chips, reserving a few to sprinkle on top of cookies before baking.
- Drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing about 2 inches apart. Press reserved chocolate chips on top.
- Bake for 12-15 minutes until edges are golden but centers look soft. Remove from oven and let cool on baking sheet for 5 minutes.
- Transfer cookies to a wire rack to cool completely before serving.
