Description
Flaky, rich, and kid-friendly mini chicken salad croissant sandwiches that are perfect for back-to-school lunches, brunches, or appetizers. They can be made ahead of time and assembled quickly.

- 3 cups shredded rotisserie chicken (about 450g)
- ½ cup mayonnaise (120g)
- ¼ cup Greek yogurt (60g)
- 2 stalks celery, finely diced (about 100g)
- 2 tablespoons red onion, finely minced (about 30g)
- ½ cup dried cranberries or raisins (60g)
- 1 tablespoon fresh lemon juice (15ml)
- ½ teaspoon garlic powder
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- 12–15 mini croissants
- Butter (optional, for toasting)
Instructions
- Shred the rotisserie chicken into bite-sized pieces and pat dry with a paper towel to remove excess moisture.
- Finely dice the celery and red onion. If using fresh grapes, halve them and remove seeds.
- In a large mixing bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and black pepper until smooth.
- Add the shredded chicken, diced celery, red onion, and dried fruit to the bowl. Gently fold until the chicken is coated. Taste and adjust seasoning if needed.
- Slice the mini croissants in half horizontally.
- Optional: Brush cut sides with melted butter and toast in an oven preheated to 350°F (175°C) for 3-5 minutes until golden and crisp.
- Let croissants cool slightly, then spoon a generous tablespoon of chicken salad onto the bottom half of each croissant.
- Top with the other half of the croissant and press down gently. Serve immediately or wrap for later.
Notes
The chicken salad can be made up to 3 days in advance and stored in an airtight container. Toasting the croissants helps prevent them from getting soggy. For picky eaters, make a base batch of chicken salad without fruit and let individuals add their own mix-ins like grapes, apples, or nuts.
