- 12 large jalapeño peppers
- 1 pound thick-cut bacon
- 8 ounces cream cheese, softened
- 1 cup sharp cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
- Wear gloves and wash the jalapeños. Slice each pepper in half lengthwise. Use a small spoon to scrape out seeds and membranes (leave some seeds for extra heat if desired).
- In a medium bowl, mix softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper until smooth.
- Pipe or spoon the cheese mixture generously into each pepper half, packing it tight.
- Wrap a slice of bacon around each stuffed pepper half, tucking the end under or overlapping it. Secure with a toothpick if necessary.
- Place poppers on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway through with tongs to ensure even browning.
- Bacon should be crispy and golden, and cheese bubbly. If needed, broil for 1-2 minutes for extra crispiness.
- Remove from oven and let cool for 5 minutes before serving.
Notes
Wear gloves when handling jalapeños to avoid skin irritation. Use thick-cut bacon for best texture as thin bacon may burn. Let poppers cool for 5 minutes to allow cheese to set slightly. Can be made ahead and refrigerated for up to 24 hours before baking.
