  • 1 pound thick-cut bacon
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wear gloves and wash the jalapeños. Slice each pepper in half lengthwise. Use a small spoon to scrape out seeds and membranes (leave some seeds for extra heat if desired).
  3. In a medium bowl, mix softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper until smooth.
  4. Pipe or spoon the cheese mixture generously into each pepper half, packing it tight.
  5. Wrap a slice of bacon around each stuffed pepper half, tucking the end under or overlapping it. Secure with a toothpick if necessary.
  6. Place poppers on the prepared baking sheet.
  7. Bake for 20-25 minutes, flipping halfway through with tongs to ensure even browning.
  8. Bacon should be crispy and golden, and cheese bubbly. If needed, broil for 1-2 minutes for extra crispiness.
  9. Remove from oven and let cool for 5 minutes before serving.

Notes
