These baked blueberry protein oatmeal cups are a moist, chewy, and high-protein breakfast option that is easy to prepare and perfect for meal prep. They offer a convenient, handheld alternative to traditional oatmeal or granola bars.
Ingredients
- 1 ½ cups old-fashioned rolled oats
- 1 scoop vanilla whey protein isolate (30g)
- 2 large eggs
- ¾ cup milk (whole or plant-based)
- ½ cup fresh or frozen blueberries
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon baking powder
- Optional: 1 tablespoon chia seeds
- Optional: 2 tablespoons dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with silicone liners or grease well with butter/cooking spray.
- In a mixing bowl, whisk together rolled oats, protein powder, baking powder, and cinnamon to break up clumps.
- Add eggs, milk, honey (or maple syrup), and vanilla extract to the dry ingredients. Whisk vigorously until a thick, paste-like batter forms.
- Gently fold in the blueberries (and optional chia seeds or chocolate chips) using a spatula, being careful not to crush the berries.
- Scoop the batter into the prepared muffin cups, filling each about ¾ full. Press down slightly with the back of a spoon.
- Bake for 20-25 minutes, or until the tops are set, slightly golden, and a toothpick inserted into the center comes out clean.
- Let the cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before eating or storing.
Notes
Frozen blueberries are recommended as they burst during baking to create jammy pockets. If using quick oats, the texture will be softer. For extra moisture, add a tablespoon of applesauce. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat in the microwave for 20-30 seconds.
