Crispy, spicy, and tender baked buffalo chicken taquitos that are easy to make, make-ahead friendly, and perfect for game day or parties without the mess of deep frying.

- 2 cups cooked chicken breast, shredded (about 400g)
- ½ cup buffalo sauce
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- ¼ cup ranch dressing
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 12–15 small flour tortillas (6-inch)
- 2 tablespoons avocado oil or vegetable oil
- Coarse sea salt, for sprinkling
- Extra ranch dressing, for serving
- Blue cheese dressing, optional for serving
- Chopped celery or carrots, for garnish
- Fresh cilantro, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, combine shredded chicken, softened cream cheese, shredded cheddar, buffalo sauce, ranch dressing, garlic powder, and onion powder. Mix until well combined and moist.
- Warm tortillas by wrapping them in a damp paper towel and microwaving for 30-45 seconds, or heating in foil in the oven for 5 minutes to prevent cracking.
- Place a warm tortilla on a flat surface. Spoon 2-3 tablespoons of the chicken mixture onto the bottom third of the tortilla.
- Roll the tortilla up tightly from the bottom, tucking in the sides as you go. Place seam-side down on the prepared baking sheet.
- Repeat with remaining tortillas and filling to make 12-15 taquitos.
- In a small bowl, mix avocado oil with a pinch of salt. Brush the tops of the taquitos lightly with the oil mixture.
- Bake for 15-18 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven and let cool for 2-3 minutes to set.
- Sprinkle with coarse sea salt and serve with extra ranch, blue cheese, and fresh vegetables.
Notes
Keep tortillas warm while assembling to prevent cracking. Do not overfill the tortillas to avoid bursting. Roll tightly to ensure they hold together. For a gluten-free version, use corn tortillas but handle gently as they are more fragile. Unbaked taquitos can be frozen and baked from frozen, adding 5-10 minutes to cooking time.
