Blueberry Lemon Chia Water: 10-Minute Easy Recipe

Ingredients

  • 1 cup (150g) fresh or frozen blueberries
  • 1 large lemon (juice and zest)
  • 4 cups (950ml) cold filtered water
  • 1/2 cup (about 20 leaves) fresh mint leaves
  • 2 tablespoons (30g) chia seeds
  • 12 tablespoons (15-30ml) honey or maple syrup (optional)
  • 1/2 cucumber, sliced thinly (optional)
  • Ice cubes (optional)
  • 1 inch ginger, grated (optional)

Instructions

  1. Wash blueberries and mint leaves thoroughly. If using fresh blueberries, pat them dry.
  2. Zest the lemon before cutting it. Slice the lemon into thin rounds or wedges.
  3. Place blueberries and mint leaves in the bottom of a 64-ounce pitcher.
  4. Use the back of a spoon to gently crush (muddle) the blueberries and bruise the mint leaves to release juices and oils.
  5. Squeeze the lemon halves over the mixture to extract the juice, then add the lemon zest and slices to the pitcher.
  6. Add honey or maple syrup. If using honey, microwave for 10 seconds to thin it or stir vigorously.
  7. Stir in the chia seeds thoroughly to distribute them evenly and prevent clumping.
  8. Pour in the cold water, filling the pitcher to the top, and stir again to ensure chia seeds are submerged.
  9. Let the mixture infuse at room temperature for at least 5 minutes, or refrigerate for 1-2 hours for stronger flavor.
  10. Stir again before serving. Pour into glasses with ice cubes and garnish with mint and lemon if desired.

Notes

Frozen blueberries work better than fresh as they keep the water colder and release more color. To prevent chia seeds from clumping, stir them in immediately after adding water or mix with a little honey first. The drink will thicken over time as chia seeds absorb liquid; stir well before serving. Do not freeze this recipe as the texture of chia seeds will change negatively. Best consumed within 2 days for optimal flavor.
