Ingredients

- 1.5 cups (360g) salsa
- 2 cups (200g) sharp cheddar cheese, shredded
- 1 cup (100g) Monterey Jack cheese, shredded

- Lime wedges (for serving)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish with cooking spray or butter.
- Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon, cooking until no longer pink (5-7 minutes). Drain excess fat if necessary.
- Sprinkle taco seasoning over the browned beef and stir well. Add the drained black beans, corn, and salsa. Stir to coat evenly and simmer for 2-3 minutes until thick and saucy.
- Transfer the beef mixture into the prepared baking dish and spread it out evenly.
- Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the top.
