Instructions

  1. Measure out and sift the flour, cocoa powder, baking soda, and salt into a large bowl. Crush peppermint candies into coarse pieces. Soften butter if cold. Prepare egg and vanilla.
  2. In a separate bowl, cream the softened butter with both sugars using a mixer until fluffy and pale, about 3-4 minutes. Scrape down sides as needed.
  3. Beat in the egg and vanilla extract until fully combined; mixture may look curdled.
  4. Slowly add dry ingredients to wet ingredients in batches, mixing just until combined after each addition. Avoid overmixing.
  5. Gently fold in crushed peppermint candies and chocolate chips with a spatula.
  6. Optional: Chill dough in the fridge for 30 minutes to control spreading and enhance flavor.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats. Scoop dough onto sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set but centers look soft. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
