  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and vanilla extract (if using). Mix until smooth.
  3. Add the rolled oats and stir until everything is evenly coated. The dough will be stiff.
  4. Scoop the dough into balls (about 1.5 inches in diameter) and place them on the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 9-11 minutes. The edges should be just starting to turn golden, but the centers should still look soft and pale.
