Description

Ingredients

  • 6 ounces bittersweet or dark chocolate chips (at least 60% cocoa)

Instructions

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together egg whites, granulated sugar, vanilla extract, and salt until sugar starts to dissolve and mixture is slightly frothy.
  3. Fold shredded coconut into the egg white mixture until well coated and mixture sticks together when pressed.
  4. Using a small cookie scoop or tablespoon, drop mounds of the mixture onto the prepared baking sheet, spacing about 1 inch apart. Shape tops into peaks if desired.
  5. Bake for 18-20 minutes until edges are golden brown and centers are slightly soft.
  6. Transfer macaroons to a cooling rack and let cool completely.
  7. Melt chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between, or use a double boiler until smooth.
  8. Dip bottoms of cooled macaroons into melted chocolate and place back on parchment paper. Optionally drizzle chocolate over tops.
  9. Let chocolate set at room temperature or refrigerate for 10 minutes to harden.
  10. Serve or store in an airtight container at room temperature for up to one week, or freeze for up to 3 months.
