  • ¼ cup (64g) creamy peanut butter
  • ⅓ cup (45g) all-purpose flour
  • ⅓ cup (65g) granulated sugar
  • 2 tablespoons (15g) unsweetened cocoa powder
  • 3 tablespoons (43g) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Melt the chocolate chips and butter together in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth and glossy. Alternatively, melt gently over a double boiler.
  2. In a separate bowl, whisk the egg, sugar, and vanilla extract until pale and slightly frothy. Add the melted chocolate-butter mixture and stir to combine.
  3. Sift in the flour, cocoa powder, and a pinch of salt if using. Stir gently until just combined; do not overmix.
  4. Grease two 6-ounce ramekins well with butter or non-stick spray. Pour batter evenly into each ramekin, filling about halfway.
  5. Drop a heaping tablespoon of peanut butter into the center of each ramekin, then cover with the remaining batter.
  6. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until edges are set but centers are still slightly jiggly.
  7. Remove from oven and let cool for 1-2 minutes. Run a knife around edges and invert onto plates or serve directly from ramekins.
  8. Serve immediately, optionally with vanilla ice cream or a dusting of powdered sugar.

Notes
