Description
A creamy, dairy-free, and refreshing summer drink made with coconut milk, frozen strawberries, and lime juice. It’s light, visually stunning, and ready in just 5 minutes.

- 1 can (13.5 oz / 400ml) full-fat unsweetened coconut milk
- 1.5 cups (200g) frozen strawberries
- 1 cup (240ml) ice
- 2 tablespoons (30ml) fresh lime juice
- 2–3 tablespoons (30-45ml) honey or agave nectar
- ½ teaspoon vanilla extract
- Optional: ¼ cup coconut water
- Optional: 4-5 mint leaves
- Optional: Extra frozen strawberries for garnish
Instructions
- Shake the can of coconut milk well before opening to ensure the cream and water are mixed.
- Add the coconut milk, frozen strawberries, ice, lime juice, honey (or agave), and vanilla extract to a high-speed blender.
- Blend on low speed, gradually increasing to high, for 45-60 seconds until the mixture is smooth and creamy.
- Taste the mixture and adjust sweetness with more honey or tartness with more lime juice if needed.
- Pour into tall glasses. Optionally muddle mint leaves in the bottom of the glass before pouring.
- Garnish with a slice of strawberry or a sprig of mint and serve immediately.
Notes
Shake the coconut milk can vigorously before opening to prevent separation. Use frozen strawberries for a thick, slushy texture without watering down the drink with melting ice. Adjust sweetness based on the tartness of your limes and sweetness of your berries. This drink is best served immediately as it separates and loses texture if stored.
