Description
A thick, creamy, and visually stunning homemade version of the famous Swig Dirty Dr Pepper, made with chilled coconut cream, lime juice, and Dr Pepper for a dairy-free dessert drink.
Ingredients
Scale
- 12 oz (355ml) chilled Dr Pepper
- 1/2 cup (120ml) chilled full-fat coconut cream (solid part only)
- 1 tablespoon (15ml) fresh lime juice
- Ice cubes
- 1 lime wheel (for garnish)
- Shaved coconut (optional, for garnish)
Instructions
- Chill the coconut milk in the fridge for at least 8 hours until the cream separates from the liquid.
- Open the can and scoop out the solid white coconut cream into a blender, discarding the watery liquid.
- Add the coconut cream and fresh lime juice to the blender.
- Blend on high for 15-20 seconds until smooth and whipped-cream-like in consistency.
- Fill a tall highball or Collins glass tightly with ice cubes.
- Pour the chilled Dr Pepper over the ice, leaving about an inch of space at the top.
- Spoon or pour the blended coconut-lime cream over the back of a spoon onto the surface of the soda to create layers.
- Gently stir the drink to create a marbled effect, but do not mix completely smooth.
- Garnish with a lime wheel or shaved coconut and serve immediately with a straw.
Notes
The coconut cream must be very cold to prevent melting the ice and separating the drink. Use fresh lime juice for the best flavor balance. If the drink separates, simply stir and drink. For a crowd, set up a ‘Dirty Dr Pepper Bar’ with ingredients for self-service.
