Ingredients
- 1 cup (150g) coarse stone-ground cornmeal
- 4 cups (950ml) chicken or vegetable broth (low-sodium)
- 2 tablespoons (30g) unsalted butter
- 1 cup (100g) sharp cheddar cheese, freshly grated
- 1/2 cup (120ml) heavy cream or whole milk
- 1/2 teaspoon salt (or to taste)
- Freshly cracked black pepper (to taste)
Instructions
- In a medium heavy-bottomed saucepan, combine the broth and butter over medium-high heat. Bring to a gentle simmer (small bubbles around edges) for about 5 minutes.
- Slowly sprinkle the cornmeal into the simmering liquid in a thin stream while whisking constantly to prevent lumps. Whisk vigorously for 1-2 minutes until incorporated and slightly thickened.
- Reduce heat to medium-low. Simmer gently, stirring every 5 minutes with a wooden spoon, scraping the bottom and sides of the pan. Continue for 15-20 minutes until the polenta is thick, creamy, and the cornmeal is tender (not gritty).
- Remove the pan from the heat. Stir in the heavy cream until combined.
- Gradually add the grated cheese, stirring constantly until fully melted and the polenta is glossy and smooth. Do not return to high heat to avoid graininess.
- Season with salt and black pepper to taste. Serve immediately while hot.
Notes
Use coarse stone-ground cornmeal for the best texture; avoid instant cornmeal or grits. Always grate your own cheese, as pre-grated cheese contains anti-caking agents that prevent smooth melting. Remove the pan from heat before adding cheese to ensure it melts smoothly without separating. If the polenta becomes too thick, add more broth or milk a splash at a time. Polenta thickens as it cools, so keep it slightly looser than desired when serving.
