Instructions
- Let the block of cream cheese sit at room temperature for 15 minutes to soften. Break it into chunks.
- Pour the cherry pie filling into a colander and drain about half of the syrup into a separate bowl. Reserve the syrup.
- In a medium mixing bowl, combine the softened cream cheese, drained cherry pie filling, and vanilla extract.
- Using a fork or electric mixer on low, mash and stir the ingredients until the cream cheese is broken down and evenly combined with the cherries. Avoid overmixing to maintain a dense, creamy texture.
- Check consistency; if too dry, add a teaspoon of reserved syrup. If too runny, mix slightly more or add a bit more cream cheese.
- Transfer the dip to a shallow serving bowl. Top with whipped cream and mint if desired.
- Serve immediately with graham crackers.
