  • 3 tablespoons unsalted butter
  • 68 cloves garlic, minced
  • 0.5 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 0.5 cup freshly grated parmesan cheese
  • 0.5 teaspoon red pepper flakes
  • 0.5 cup sun-dried tomatoes (packed in oil), drained
  • 34 cups fresh baby spinach
  • Fresh basil or parsley for garnish

Instructions

  1. Let pork chops sit at room temperature for 15-20 minutes. Pat dry with paper towels and season generously with salt, pepper, and Italian seasoning.
  2. Heat a large skillet over medium-high heat with oil. Sear pork chops for 4-5 minutes on the first side until golden brown. Flip and cook for another 3-4 minutes until internal temperature reaches 145°F. Remove to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not brown.
  4. Add sun-dried tomatoes and a tablespoon of their oil to the pan. Pour in chicken broth and scrape up brown bits from the bottom. Simmer for 1-2 minutes.
  5. Pour in heavy cream and stir. Simmer gently for 2-3 minutes until sauce begins to thicken.
  6. Remove pan from heat. Stir in parmesan cheese until melted and smooth. Add spinach and stir until wilted (about 30 seconds).
  7. Return pork chops to the pan, spooning sauce over the top. Let sit for 1 minute to reheat. Taste and adjust seasoning. Serve immediately garnished with fresh basil or parsley.

Notes

Do not overcook the pork chops; pull them at 145°F as they will continue to cook slightly after removal. Always remove the pan from heat before adding parmesan to prevent the sauce from seizing. Use freshly grated parmesan, as pre-grated cheese contains anti-caking agents that prevent smooth melting. Reserve the oil from the sun-dried tomatoes to add extra flavor to the sauce.
