Description
A quick, savory, and gooey dip that deconstructs the classic Reuben sandwich. Made with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing, it’s perfect for game day and ready in just 10 minutes.
Ingredients
- 2 cups (200g) grated Swiss cheese
- 1 cup (150g) chopped corned beef
- 1 cup (150g) drained and squeezed sauerkraut
- 1/2 cup (120ml) Thousand Island dressing
- 1 loaf rye bread, sliced into 1/2-inch pieces
- 4 tablespoons (60g) melted butter
- 1 teaspoon garlic powder
- Optional: Red pepper flakes
- Optional: Chopped dill pickles
Instructions
- Preheat oven to 400°F (200°C).
- Mix melted butter with garlic powder. Brush both sides of rye bread slices and arrange on a baking sheet.
- Toast bread for 5-7 minutes, flipping halfway, until golden and crispy. Set aside on a wire rack.
- Place a 10-inch cast iron skillet over medium heat. Add corned beef and sauté for 2 minutes to warm and release aroma.
- Reduce heat to medium-low. Pour in Thousand Island dressing and simmer for 1 minute.
- Add drained sauerkraut and mix well.
- Add grated Swiss cheese and stir constantly until melted and smooth. Remove skillet from heat.
- Turn oven broiler to high. Place skillet under broiler for 1-2 minutes, watching closely, until top is bubbly and golden brown.
- Serve immediately with warm rye crostini.
Notes
Drain and squeeze sauerkraut thoroughly to prevent a watery dip. Grate your own cheese for smooth melting, as pre-shredded cheese contains anti-caking agents. Watch the broiler closely to avoid burning. For a spicy version, add red pepper flakes. For a slow cooker version, sauté beef and kraut, add cheese and dressing, and cook on low for 1-2 hours.
