A rich, creamy, and savory potato salad loaded with crispy bacon, sharp cheddar, and green onions. This comfort food side dish is easy to make, holds up well for meal prep, and is perfect for potlucks and BBQs.

- 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons sea salt
- 1 tablespoon white vinegar
- 1 cup mayonnaise (full fat)
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 8 slices thick-cut bacon, cooked and crumbled
- 1 cup sharp cheddar cheese, shredded
- 4–5 green onions, thinly sliced
- 2 tablespoons fresh chives, chopped
- 1 teaspoon freshly cracked black pepper
- Optional: 2 hard-boiled eggs, chopped
- Optional: 1-2 teaspoons hot sauce
- Optional: 1 tablespoon melted butter
Instructions
- Peel potatoes and cut into 1-inch cubes. Ensure pieces are roughly the same size for even cooking.
- Fill a large pot with cold water. Add sea salt and white vinegar. Bring to a boil.
- Add potato cubes to the boiling water. Reduce heat to a simmer and cook for 15-20 minutes until fork-tender but firm. Drain and let cool for 10 minutes until warm.
- While potatoes cook, fry bacon in a skillet over medium heat until crispy. Drain on paper towels, cool, and crumble into bite-sized pieces.
- In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, garlic powder, smoked paprika, and black pepper.
- In a large mixing bowl, combine warm potatoes, crumbled bacon, shredded cheddar, and green onions.
- Pour the dressing over the potato mixture and gently fold to coat without mashing the potatoes.
- Cover and refrigerate for at least 1 hour, preferably 2-4 hours, to allow flavors to meld.
- Before serving, stir gently, taste for seasoning, and garnish with extra bacon and chives.
Notes
Add dressing while potatoes are still warm to help absorption. Do not overmix to prevent mushy texture. Shred your own cheese for better texture. This salad tastes better the next day. It does not freeze well due to the mayo and sour cream.
