  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 24 ounces full-fat cream cheese, room temperature
  • 1 cup confectioners’ sugar, sifted
  • 1 cup heavy cream, cold
  • 2 to 3 tablespoons ceremonial grade matcha powder, sifted
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 2 tablespoons heavy cream (for melting chocolate)
  • Pinch of salt (for chocolate)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper and grease lightly. Mix graham cracker crumbs, melted butter, sugar, and salt until it resembles wet sand. Press firmly into the bottom of the pan and chill in the fridge.
  2. In a large cold bowl, whip the cold heavy cream on high speed until soft peaks form. Set aside.
  3. In a mixer bowl, beat the softened cream cheese and sifted powdered sugar on medium-low until smooth. Scrape down sides. Add matcha powder and vanilla, beating on low until the color is uniform and vibrant green.
  4. Gently fold the whipped heavy cream into the matcha cream cheese mixture using a spatula until no white streaks remain. The mixture should look like a fluffy mousse.
  5. Melt white chocolate chips with 2 tablespoons of heavy cream in 15-second microwave bursts, stirring until smooth. Let cool slightly. Drizzle half over the green layer and swirl with a knife. Drizzle remaining chocolate and swirl again.
  6. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until set. Lift out using parchment overhang and slice with a sharp, wiped knife.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Sift matcha and powdered sugar for a smooth texture. Do not over-whip the heavy cream. For clean cuts, dip the knife in hot water and wipe dry between slices. These bars taste better the next day as flavors meld.
