Description

A creamy, spiced iced coffee drink inspired by San Antonio horchata, featuring a homemade rice-cinnamon base served over strong coffee with a cinnamon sugar rim.


Ingredients

  • 1/2 cup white long-grain rice
  • 2 cups water (for soaking)
  • 2 large cinnamon sticks
  • 1 teaspoon vanilla extract
  • 1/4 to 1/2 cup sugar (adjust to taste)
  • 1 cup milk (dairy or non-dairy like oat or almond)
  • 1 cup strong brewed coffee (cold brew preferred)
  • Ice cubes
  • 2 tablespoons granulated sugar (for rim)
  • 1 teaspoon ground cinnamon (for rim)
  • 1 lemon or lime wedge (for rim)

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Place the rinsed rice, cinnamon sticks, and 2 cups of water in a large jar or bowl. Soak for at least 1 hour or overnight in the refrigerator.
  3. Pour the soaked rice, water, cinnamon sticks, sugar, and vanilla extract into a high-speed blender.
  4. Blend on high for 1-2 minutes until the mixture is completely smooth and milky.
  5. Strain the mixture through a fine-mesh strainer or nut milk bag into a pitcher, pressing the liquid out of the solids. Discard the solids.
  6. Stir the strained horchata base with the milk. Taste and adjust sweetness if needed. Refrigerate until cold.
  7. Mix the granulated sugar and ground cinnamon in a small bowl.
  8. Run the lemon or lime wedge around the rim of glasses and dip them into the cinnamon sugar mixture to create a rim.
  9. Fill the prepared glasses with ice cubes.
  10. Pour the chilled horchata base into the glasses until about half full.
  11. Slowly pour the strong brewed coffee over the ice to create swirls.
  12. Stir gently to combine and serve immediately.

Notes

Soaking the rice overnight yields the best flavor and texture. For a nuttier flavor, add raw almonds to the blender. Use cold brew coffee to prevent dilution and maintain smoothness. The horchata base can be stored in the fridge for up to 5 days.
