  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter for searing
  • Optional: 1/2 teaspoon red pepper flakes

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. Pound to 1/2-inch thickness for even cooking.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
  3. Reduce heat to medium-low. Add cream cheese, chopped artichoke hearts, squeezed spinach, garlic powder, onion powder, and Italian seasoning to the same skillet.
  4. Stir constantly until cream cheese is melted and sauce is smooth (3-4 minutes). Add a splash of broth if too thick.
  5. Return chicken to the skillet, nestling it into the sauce. Spoon sauce over the top.
  6. Simmer gently for 3-4 minutes to finish cooking the chicken and meld flavors.

Squeeze all water out of the frozen spinach to prevent a watery sauce. Pound chicken breasts to even thickness for uniform cooking. Use softened cream cheese to avoid lumps.
