  • 16 oz shelf-stable potato gnocchi
  • 1/2 cup sun-dried tomatoes packed in oil (drained, oil reserved)
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1.5 cups low-moisture mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, freshly grated
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil. Add gnocchi and cook for 3-4 minutes until they float. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add sun-dried tomatoes and minced garlic; sauté for 2-3 minutes until fragrant.
  4. Reduce heat to low. Pour in heavy cream and add cream cheese. Stir constantly until cream cheese is melted and sauce is smooth.
  5. Stir in Italian seasoning, red pepper flakes, and black pepper. Taste and adjust salt if needed.
  6. Add the drained gnocchi to the skillet and gently toss to coat evenly.
  7. Transfer the mixture to an 8×8 or 9×9 inch baking dish.
  8. Sprinkle shredded mozzarella and grated Parmesan evenly over the top.
  9. Bake for 15-20 minutes until cheese is melted, bubbly, and golden brown.
  10. Let rest for 5 minutes before serving.

Notes

Use shelf-stable gnocchi for better texture during baking. Shred your own mozzarella for better melting. Save the oil from the sun-dried tomatoes to add flavor to the sauce. Let the dish rest for 5 minutes after baking to allow the sauce to thicken.
