  • 1/2 cup Chicken Broth (low-sodium)
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste
  • 1/4 cup Fresh Basil, chopped (for garnish)

Instructions

  1. Prep ingredients: Chop sun-dried tomatoes, mince garlic, and grate Parmesan cheese.
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
  4. Add chopped sun-dried tomatoes to the skillet and cook for 1 minute to release oils.
  5. Pour in chicken broth and simmer for 2 minutes to reduce slightly.
  6. Add heavy cream and dried basil. Stir and simmer for 3-4 minutes until the sauce thickens slightly.
  7. Remove skillet from heat. Gradually stir in grated Parmesan cheese until melted and smooth. Add a splash of reserved pasta water if the sauce is too thick.
  8. Add drained pasta to the skillet and toss to coat evenly. Adjust salt and pepper to taste.
  9. Serve immediately, garnished with fresh basil, extra Parmesan, and a drizzle of olive oil.

Notes

Save the pasta water; the starch helps the sauce cling to the noodles. Always remove the pan from heat before adding Parmesan to prevent a grainy texture. Use high-quality sun-dried tomatoes packed in oil for the best flavor. For a lighter version, substitute half-and-half for heavy cream.
