A rich, restaurant-quality creamy Tuscan garlic chicken skillet that comes together in just 20 minutes using simple pantry ingredients like sun-dried tomatoes, spinach, and heavy cream.

- 4 large boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 6–8 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped (packed in oil)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried Italian seasoning
- Salt and black pepper, to taste
- 1/2 cup freshly grated Parmesan cheese
- 4–5 cups fresh baby spinach
Instructions
- Pat chicken breasts dry and season generously with salt and pepper. Pound to an even 1/2-inch thickness if necessary.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
- Reduce heat to medium. Add minced garlic and sun-dried tomatoes (with some of their oil) to the same skillet. Sauté for 1-2 minutes until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
- Add heavy cream and Italian seasoning. Simmer gently for 3-4 minutes until the sauce thickens slightly.
- Reduce heat to low. Stir in Parmesan cheese until melted. Add spinach and stir until wilted.
- Return chicken to the skillet, spooning sauce over the top. Let sit for 1 minute to reheat before serving.
Notes
Save the oil from the sun-dried tomatoes to sauté the garlic for extra flavor. Do not use pre-grated cheese as it contains anti-caking agents that can make the sauce grainy. If the sauce is too thin, simmer longer; if too thick, add a splash of broth or milk. Chicken thighs can be substituted for breasts.
