  • 4 large boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 68 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese
  • 45 cups fresh baby spinach

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. Pound to an even 1/2-inch thickness if necessary.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
  3. Reduce heat to medium. Add minced garlic and sun-dried tomatoes (with some of their oil) to the same skillet. Sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
  5. Add heavy cream and Italian seasoning. Simmer gently for 3-4 minutes until the sauce thickens slightly.
  6. Reduce heat to low. Stir in Parmesan cheese until melted. Add spinach and stir until wilted.
  7. Return chicken to the skillet, spooning sauce over the top. Let sit for 1 minute to reheat before serving.

Notes

Save the oil from the sun-dried tomatoes to sauté the garlic for extra flavor. Do not use pre-grated cheese as it contains anti-caking agents that can make the sauce grainy. If the sauce is too thin, simmer longer; if too thick, add a splash of broth or milk. Chicken thighs can be substituted for breasts.
