  • 1 teaspoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  1. Pat the salmon cubes dry with paper towels to ensure crispiness.
  2. Place salmon in a bowl and toss with cornstarch (or flour), salt, and pepper until lightly coated.
  3. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger to make the sauce.
  4. Heat neutral oil in a large skillet over medium-high heat until shimmering.
  5. Add salmon cubes in a single layer (cook in batches if necessary to avoid overcrowding).
  6. Sear salmon for 3-4 minutes without moving, then flip and cook for another 2-3 minutes until opaque and flaky.
  7. Reduce heat to medium-low and pour the sauce over the salmon.
  8. Toss gently to coat and cook for 1-2 minutes until the sauce is sticky and clings to the fish.
  9. Remove from heat and serve immediately, garnished with green onions and sesame seeds.

Notes

Pat the salmon dry before cooking to ensure a crispy crust rather than steaming. Do not overcrowd the pan; cook in batches if necessary. Use high heat for searing to create a Maillard reaction. If the sauce is too thick, add a splash of water or vinegar. If too spicy, add more honey.
