A simple, 5-ingredient breakfast hash featuring crispy sweet potatoes, caramelized onions, and fried eggs. It is gluten-free, dairy-free, and ready in under 30 minutes.

- 2 large sweet potatoes (about 1 lb / 450g), peeled and diced into ½-inch cubes
- 1 medium yellow onion, diced
- 2 tablespoons avocado oil or olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon sea salt (divided)
- Black pepper (to taste)
- 4 large eggs
- Fresh parsley or chives, chopped (optional)
Instructions
- Peel and dice sweet potatoes into uniform ½-inch cubes. Toss them in a bowl with 1 tablespoon of oil, smoked paprika, garlic powder, ½ teaspoon of salt, and pepper until well coated.
- Heat a large 12-inch skillet over medium heat. Add the remaining 1 tablespoon of oil. Once shimmering, add the diced onions and cook for 3-4 minutes until soft and translucent. Remove onions from the pan and set aside on a plate.
- Add the seasoned sweet potatoes to the skillet in an even layer. Do not stir for the first 5 minutes to allow them to crisp up. Flip the potatoes, cook for another 5 minutes, then stir. Continue cooking for 5-10 more minutes, stirring every 2-3 minutes, until tender inside and crispy outside.
- Return the cooked onions to the pan with the potatoes. Toss to combine and let sit for 1-2 minutes to meld flavors. Taste and add remaining salt if needed.
- Push the hash to one side of the pan (or use a second small skillet). Add a tiny splash of oil to the empty space. Crack eggs into the pan and fry to your desired doneness (sunny-side up recommended). Season eggs with salt and pepper.
- Scoop the hash onto plates, top with fried eggs, and sprinkle with fresh herbs if using. Serve immediately.
Notes
Do not crowd the pan, as this causes steaming instead of crisping. Ensure sweet potato cubes are uniform in size for even cooking. Use avocado oil for a higher smoke point. This recipe is naturally gluten-free and dairy-free. For a vegan version, omit the eggs or substitute with tofu scramble.
