Description
A safe, no-bake edible cookie dough recipe that is ready in just 5 minutes. Made with heat-treated flour and no raw eggs, these bites are perfect for a quick, kid-approved snack or dessert.
Ingredients
Scale
- 1 cup (120g) all-purpose flour (heat-treated)
- 1/2 cup (115g) unsalted butter, room temperature
- 1/2 cup (100g) granulated sugar
- 1/2 cup (110g) light brown sugar, packed
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup (85g) mini chocolate chips
- Sea salt flakes (optional, for topping)
Instructions
- Heat-treat the flour by microwaving it on high for 60-90 seconds (stirring every 20 seconds) until it reaches 160°F, or baking it on a sheet at 350°F for 5-7 minutes. Let it cool completely.
- In a mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 1-2 minutes).
- Stir in the vanilla extract and salt until just combined.
- Add the cooled, heat-treated flour to the butter mixture and mix until a cohesive dough forms. If too dry, add 1 tsp milk; if too wet, add 1 tbsp flour.
- Gently fold in the mini chocolate chips until evenly distributed.
- Portion the dough into 1-inch balls using a cookie scoop or two teaspoons. Roll between palms to smooth.
- Place balls on a parchment-lined sheet and chill in the refrigerator for at least 10 minutes to firm up.
- Serve chilled. Sprinkle with sea salt flakes if desired. Store in an airtight container in the fridge for up to a week.
Notes
It is crucial to heat-treat the flour to kill potential bacteria like E. coli, as this recipe contains no eggs. Room temperature butter is essential for proper creaming. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter sticks and chocolate chips. These bites can be frozen for up to 3 months.
