Edible Cookie Dough Bites: 5-Min No-Bake Recipe

  • Author: Lilya
  • Total Time: 15 minutes
  • Yield: 12 servings 1x

Description

A safe, no-bake edible cookie dough recipe that is ready in just 5 minutes. Made with heat-treated flour and no raw eggs, these bites are perfect for a quick, kid-approved snack or dessert.

Ingredients

Scale
  • 1 cup (120g) all-purpose flour (heat-treated)
  • 1/2 cup (115g) unsalted butter, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup (85g) mini chocolate chips
  • Sea salt flakes (optional, for topping)

Instructions

  1. Heat-treat the flour by microwaving it on high for 60-90 seconds (stirring every 20 seconds) until it reaches 160°F, or baking it on a sheet at 350°F for 5-7 minutes. Let it cool completely.
  2. In a mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 1-2 minutes).
  3. Stir in the vanilla extract and salt until just combined.
  4. Add the cooled, heat-treated flour to the butter mixture and mix until a cohesive dough forms. If too dry, add 1 tsp milk; if too wet, add 1 tbsp flour.
  5. Gently fold in the mini chocolate chips until evenly distributed.
  6. Portion the dough into 1-inch balls using a cookie scoop or two teaspoons. Roll between palms to smooth.
  7. Place balls on a parchment-lined sheet and chill in the refrigerator for at least 10 minutes to firm up.
  8. Serve chilled. Sprinkle with sea salt flakes if desired. Store in an airtight container in the fridge for up to a week.

Notes

It is crucial to heat-treat the flour to kill potential bacteria like E. coli, as this recipe contains no eggs. Room temperature butter is essential for proper creaming. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter sticks and chocolate chips. These bites can be frozen for up to 3 months.
