- 2 cups milk (whole, oat, or almond)
- ½ cup Greek yogurt (plain, non-fat or low-fat)
- 3 tablespoons maple syrup

- 1 teaspoon vanilla extract
- 2 medium apples (Honeycrisp, Fuji, or Braeburn), peeled and diced

- ¼ cup all-purpose flour
- ½ cup pecans, chopped
- 3 tablespoons brown sugar
- 2 tablespoons cold butter, cubed
- 1 tablespoon maple syrup (for crumble)
- ¼ teaspoon cinnamon (for crumble)
Instructions
- Peel and dice apples into ½-inch cubes. Set aside.
- In a large bowl, whisk together milk, Greek yogurt, 3 tablespoons maple syrup, vanilla, cinnamon, and nutmeg.
- Add the rolled oats and diced apples to the liquid mixture. Stir well to combine.
- Divide the oat mixture evenly among 4-6 mason jars or ceramic ramekins. Press down gently to flatten tops.
- Cover tightly and refrigerate overnight or for at least 6 hours.
- Preheat oven to 350°F (175°C).
- In a small bowl, mix ½ cup oats, flour, chopped pecans, brown sugar, ¼ teaspoon cinnamon, and 1 tablespoon maple syrup.
- Add cold, cubed butter to the dry ingredients. Use fingers or a fork to work butter in until mixture resembles coarse crumbs.
- Remove lids from jars. Sprinkle crumble mixture evenly over the top of each jar.
- Place jars on a baking sheet and bake for 15-20 minutes, until topping is golden brown and oats are heated through.
- Let cool for 5 minutes before serving warm.
Notes
Toast pecans in a dry pan for 3-4 minutes before chopping for enhanced flavor. Ensure butter is cold for a flaky crumble. If using a single 8×8 baking dish, bake for 25-30 minutes. Do not use steel-cut oats as they will not soften enough overnight.
