Instructions

  1. Brown the butter: Melt butter in a light-colored skillet over medium heat. Watch closely until it foams, settles, and smells nutty (about 5-7 minutes). Remove from heat and pour into a heat-proof bowl. Cool for 15-20 minutes until just warm.
  2. Mix wet ingredients: In a large bowl, whisk the cooled brown butter with granulated sugar and brown sugar. Add the egg, egg yolk, and vanilla extract. Whisk vigorously for 1 minute until glossy and slightly thickened.
  3. Combine dry ingredients: In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Make the dough: Gradually add dry ingredients to wet ingredients, mixing on low speed or with a spatula until flour disappears. Do not overmix. Fold in chocolate chips and pecans (if using).
  5. Chill the dough: Cover the bowl and refrigerate for at least 30 minutes (or up to 24 hours) to prevent spreading and improve texture.
