A rich, spiced, and incredibly comforting cold brew coffee infused with pumpkin puree, vanilla, and cinnamon sticks. This make-ahead drink is perfect for cozy nights and effortless entertaining.

- 1 cup (85g) coarse-ground coffee beans
- 4 cups (950ml) cold, filtered water
- ½ cup (120g) 100% pure pumpkin puree
- 1 teaspoon pure vanilla extract
- 2 whole cinnamon sticks
- 1 teaspoon pumpkin pie spice
- Heavy cream or milk (to taste)
- Whipped cream (optional)
- Extra cinnamon for garnish
- Maple syrup or simple syrup (optional, for sweetness)
Instructions
- Add coarse-ground coffee to a large glass jar or pitcher. Pour in cold, filtered water and stir gently to ensure all grounds are saturated.
- Add pumpkin puree, vanilla extract, pumpkin pie spice, and cinnamon sticks to the jar. Stir well to combine.
- Cover the jar and place it in the refrigerator to steep for 18 to 24 hours.
- Set up a fine-mesh strainer lined with a coffee filter or cheesecloth over a clean pitcher. Pour the coffee mixture through the strainer to remove grounds and solids. Strain twice if a smoother texture is desired.
- Taste the strained brew and add maple syrup or simple syrup if desired. Pour over ice in a tall glass.
- Top with a splash of cream or milk and whipped cream if desired. Garnish with a cinnamon stick and a dusting of extra cinnamon.
Notes
Use a coarse grind to prevent bitterness and muddy texture. Do not use pumpkin pie filling; use 100% pure pumpkin puree. The cold brew can be stored in the fridge for up to two weeks. For a dairy-free version, use oat milk or coconut cream. Avoid steeping for more than 24 hours to prevent bitterness.
