  • ¾ cup (150g) granulated sugar
  • ¼ cup packed (55g) brown sugar
  • Zest of 2 medium oranges
  • ½ cup (120ml) fresh orange juice
  • ¼ cup (60ml) vegetable oil
  • 2 large eggs
  • 1 ½ cups (150g) fresh cranberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour (for tossing cranberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Zest two medium oranges and juice them to get about ½ cup fresh juice. Rinse and pat dry cranberries, then toss them with 1 tablespoon flour to prevent sinking.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, granulated sugar, and brown sugar until well combined.
  4. In another bowl, whisk eggs until frothy. Add vegetable oil, fresh orange juice, orange zest, and vanilla extract; whisk until smooth.
  5. Pour wet ingredients into dry ingredients and fold gently with a spatula until just combined. Fold in the floured cranberries carefully.
  6. Pour batter into prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil after 40 minutes if top browns too quickly.
  7. Cool bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
