Instructions

  1. Preheat oven to 325°F (165°C). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Lightly grease the parchment.
  2. Melt butter in a large skillet over medium heat. Stir constantly until the butter foams, subsides, and turns dark amber with a nutty aroma (about 5-7 minutes). Immediately pour into a heatproof bowl, scraping in all brown bits. Let cool for 10 minutes.
  3. In a medium bowl, mix graham cracker crumbs, chopped pecans, 3 tablespoons sugar, and salt. Pour in the warm brown butter and stir until the mixture resembles wet sand. Press firmly into the bottom of the prepared pan. Refrigerate while making the filling.
  4. In a large bowl, beat cream cheese and 1 cup sugar on medium-low speed until smooth and creamy (2-3 minutes). Scrape down the sides of the bowl.
