  • 1/2 cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy (2-3 minutes).
  3. Add the egg and vanilla extract, beating until combined. Mix in the pumpkin puree until just incorporated.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. In a small bowl, mix 1/2 cup granulated sugar with 1 tablespoon cinnamon for the coating.
  7. Portion dough into balls using a cookie scoop or tablespoon. Roll each ball in the cinnamon sugar mixture to coat.
  8. Place cookies on prepared baking sheets, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until edges are set and slightly golden, but centers still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes
