  • 1 cup (200g) granulated sugar
  • 1 cup (220g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 cup (245g) canned pure pumpkin puree
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 2 teaspoons vanilla extract
  • 1.5 cups (255g) semi-sweet chocolate chips
  • 1/2 cup (85g) chocolate chunks
  • Flaky sea salt (like Maldon) for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs one at a time, whisking well after each addition. Stir in pumpkin puree, vanilla extract, and salt until smooth.
  4. In a separate medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  5. Gradually add dry ingredients to wet ingredients. Fold gently with a spatula just until flour disappears. Do not overmix.
  6. Fold in chocolate chips and chunks. Reserve a handful of chips for the top.
  7. Spread batter into prepared pan and smooth the top.
  8. Bake for 30-35 minutes, or until edges are golden brown and center is just set (toothpick should come out with moist crumbs).
  9. Let bars cool in pan for at least 15 minutes.
  10. Sprinkle reserved chocolate chips and flaky sea salt over the top while still warm.
  11. Let cool completely in the pan before cutting into squares.

Notes

Use canned pure pumpkin, not pumpkin pie filling. Measure flour by spooning it into the cup and leveling off to avoid dry bars. Let bars cool completely before cutting for clean slices. They taste better the next day as flavors meld.
