  • 1 cup (225g) small curd cottage cheese
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 2 cups fresh baby spinach, packed
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend the cottage cheese in a blender or food processor on high for 30-60 seconds until completely smooth and liquid-like with no visible curds.
  3. In a large bowl, whisk the eggs vigorously until uniform and slightly frothy. Add salt, pepper, and garlic powder, and whisk again.
  4. Pour the smooth cottage cheese into the whisked eggs and stir gently to combine.
  5. Chop the fresh spinach roughly. In a separate small bowl, mix the shredded cheddar and chopped spinach together.
  6. Gently fold the spinach and cheese mixture into the egg mixture, being careful not to overmix to maintain fluffiness.
  7. Divide the mixture evenly among 12 muffin cups, filling each about 3/4 full. Optionally sprinkle extra cheese on top.
  8. Bake for 12-15 minutes until puffed, golden on top, and set in the center (a toothpick should come out clean).
  9. Let cool in the pan for 5 minutes before gently removing.

Notes

Blend cottage cheese thoroughly to ensure a smooth texture. If using frozen spinach, thaw and squeeze out all excess water. Do not overbake as they will continue to cook from residual heat. For meal prep, store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
