Fluffy Vanilla Buttermilk Waffles: Best Easy Recipe

  • Author: Lilya
  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Description

These fluffy vanilla buttermilk waffles feature crispy edges and a tender, airy center. Made with simple ingredients like buttermilk and vanilla, this easy recipe yields perfect weekend brunch waffles that freeze well and reheat beautifully.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 3 tablespoons (37g) sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups (360ml) buttermilk
  • 2 large eggs, room temperature
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 2 teaspoons pure vanilla extract
  • Optional: 1 cup fresh blueberries or ½ cup semi-sweet chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until no lumps remain.
  2. In a separate medium bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula until just combined; stop when a few streaks of flour remain. Do not overmix.
  4. Let the batter rest on the counter for 10-15 minutes to allow the flour to hydrate.
  5. Preheat your waffle iron and lightly grease the plates with cooking spray or oil.
  6. Pour about ½ to ¾ cup of batter onto the center of the waffle iron. Close the lid and cook for 3-5 minutes, or until steam stops coming out and the waffles are golden brown.
  7. Transfer cooked waffles to a wire rack placed in a 200°F (90°C) oven to keep warm and crisp while you cook the remaining batter.

Notes

Do not overmix the batter; lumps are okay and ensure fluffy waffles. Let the batter rest for 10-15 minutes for best texture. Keep cooked waffles warm on a wire rack in a low oven rather than stacking them on a plate to prevent sogginess. These waffles freeze well for up to 3 months and reheat beautifully in a toaster.
