- 4 large Russet potatoes (about 2.5 lbs / 1.1 kg)
- 3 tablespoons vegetable or canola oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Kosher salt to taste
- 2 cups sharp cheddar cheese, shredded
- 8–10 slices cooked bacon, crumbled
- 2 tablespoons fresh chives, finely chopped
- 1/2 cup sour cream
- 2 stalks green onions, sliced
- 1/4 cup ranch dressing (optional)
Instructions
- Preheat oven to 400°F (200°C). Wash and dry potatoes, then poke 4-5 times with a fork.
- Bake potatoes directly on the rack or on a sheet for 45-60 minutes until tender. Let cool for 10-15 minutes.
- Slice potatoes in half lengthwise. Scoop out flesh, leaving 1/4 inch attached to the skin to form sturdy shells.
- Place shells cut-side up on a baking sheet. Mix garlic powder, onion powder, smoked paprika, and salt.
- Brush the inside of each shell with oil, then sprinkle with the spice mixture.
- Pre-bake shells at 400°F for 10-15 minutes until golden and firm to remove moisture and crisp edges.
- Reduce oven temperature to 375°F (190°C).
- Sprinkle shredded cheddar cheese and crumbled bacon into each pre-baked shell.
- Bake for 5-7 minutes until cheese is bubbly and slightly browned.
- Remove from oven and immediately garnish with fresh chives and sliced green onions.
- Dollop with sour cream and serve immediately.
Notes
Use Russet potatoes for the best texture; waxy potatoes will not crisp properly. Shred your own cheese to ensure smooth melting. Pre-baking the shells is crucial for crunch. Keep finished skins warm in a 200°F oven on a wire rack to maintain crispness. Do not freeze as texture suffers.
