Description

These slow cooker buffalo chicken sliders are the ultimate game day party food. Juicy, shredded chicken thighs simmered in buffalo sauce and butter, served on sweet Hawaiian rolls with melted cheddar and garlic butter.

  • 34 pounds boneless, skinless chicken thighs
  • 1.5 cups (360ml) buffalo sauce (e.g., Frank’s RedHot Original)
  • 4 tablespoons (60g) unsalted butter, melted
  • 1 pack (12-16 rolls) Hawaiian sweet rolls
  • 2 cups (200g) shredded sharp cheddar cheese
  • 4 tablespoons butter, melted (for garlic butter topping)
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped
  • Ranch or blue cheese dressing (optional, for serving)

Instructions

  1. Place chicken thighs in the bottom of a 6-quart slow cooker.
  2. Pour buffalo sauce and melted butter over the chicken. Spread to coat.
  3. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is fork-tender.
  4. Remove chicken from slow cooker and shred using two forks.
  5. Return shredded chicken to the slow cooker and stir to coat in sauce.
  6. Stir in 1 cup of shredded cheddar cheese. Cover and let sit for 10-15 minutes to melt.
  7. Preheat oven to 350°F (175°C).
  8. Slice Hawaiian rolls in half horizontally, keeping them connected as a slab.
  9. Place bottom half of rolls on a baking sheet. Top with shredded chicken mixture and remaining cheddar cheese.
  10. Mix melted butter, garlic powder, and parsley in a small bowl.
  11. Place top half of rolls over chicken. Brush generously with garlic butter mixture.
  12. Bake for 8-10 minutes until tops are golden brown and crispy.
  13. Let cool for 2-3 minutes before slicing into individual sliders. Serve with ranch or blue cheese dressing.
