Description
A creamy, spicy, and cheesy buffalo chicken dip that is perfect for tailgating, parties, or game day. This easy-to-make recipe uses rotisserie chicken and slow cooker convenience for maximum flavor with zero stress.
Ingredients
Scale
- 2 cups shredded rotisserie chicken
- 8 oz cream cheese, softened
- ½ cup buffalo sauce (such as Frank’s RedHot)
- 1 teaspoon garlic powder
- ½ cup ranch dressing
- 1 cup shredded cheddar cheese
- ¼ cup blue cheese dressing (optional)
Instructions
- Shred the rotisserie chicken into bite-sized pieces using two forks or your hands.
- In a large mixing bowl, combine the softened cream cheese, buffalo sauce, ranch dressing, garlic powder, and blue cheese dressing (if using). Mix until smooth and lump-free.
- Add the shredded chicken and half of the shredded cheddar cheese to the bowl. Stir gently until the chicken is evenly coated and cheese is distributed.
- Transfer the mixture to a greased slow cooker. Sprinkle the remaining cheddar cheese on top.
- Cook on low for 2-3 hours, stirring once halfway through, until the dip is bubbling, hot, and the cheese is melted.
- Stir the dip one last time before serving. Serve with chips, celery, and carrots, keeping it warm on the ‘warm’ setting.
Notes
For best results, ensure cream cheese is fully softened to room temperature to avoid lumps. If the dip is too runny, cook longer. If too thick, add a splash of milk or chicken broth. This dip can be made ahead and refrigerated for up to 24 hours before cooking.
