Description
A refreshing, no-churn frozen strawberry prosecco slushie made with fresh basil, lemon juice, and dry prosecco. This elegant cocktail takes only five minutes to blend and requires no special equipment.
Ingredients
- 2 cups (300g) frozen strawberries
- 1 bottle (750ml) dry or extra dry prosecco
- 1/2 cup packed fresh basil leaves
- 1 tablespoon (15ml) freshly squeezed lemon juice
- 1–2 tablespoons (15-30ml) honey or agave nectar (optional)
- 1 cup (120g) ice (optional, if berries aren’t frozen solid)
- Optional garnish: fresh basil sprigs, strawberry slices, balsamic glaze
Instructions
- Wash fresh basil leaves and pat dry. Remove thick stems if necessary. Lightly muddle leaves with a muddler or spoon to release oils (optional).
- Add frozen strawberries, fresh basil, lemon juice, and honey (if using) to a high-speed blender.
- Pour in 1 cup of prosecco. Start blending on low speed, gradually increasing to high.
- Blend on high for 30-60 seconds until a smooth, thick slushy texture is achieved. Stop to scrape down sides if needed.
- Taste the mixture and adjust sweetness with more honey or tartness with more lemon juice. Adjust consistency with more prosecco if too thick.
- Chill coupe or margarita glasses in the freezer for 15 minutes beforehand.
- Pour the slushie into chilled glasses.
- Garnish with a fresh basil sprig and a strawberry slice. Drizzle with balsamic glaze if desired.
Notes
Use dry or extra dry prosecco to avoid excessive sweetness. If using fresh strawberries, freeze them solid for at least 4 hours prior. Do not over-blend as friction can warm the mixture. For a non-alcoholic version, substitute prosecco with sparkling water or lemon-lime soda. Best served immediately; does not store well as it melts.
