Instructions

  1. Cut steak into roughly 1-inch cubes and slice mushrooms thinly. Mince garlic and chop fresh herbs if using. Pat steak dry with paper towels.
  2. Heat 2 tablespoons butter and a splash of olive oil in a large skillet over medium-high heat. Add steak pieces in a single layer without crowding. Sear for 2-3 minutes on one side, then flip and sear for another 2 minutes until browned but still juicy. Cook in batches if needed. Transfer steak to a plate and tent with foil to rest.
  3. In the same pan, add remaining 2 tablespoons butter. Once melted, add mushrooms, season with salt and pepper, and cook, stirring occasionally, until browned and moisture is released, about 4-5 minutes. Add minced garlic and cook for 30 seconds until fragrant, avoiding burning.
  4. Pour in beef broth and Worcestershire sauce to deglaze the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly. Stir in fresh thyme or rosemary.
  5. Return steak tips and any juices to the skillet. Toss to combine and heat through for 1-2 minutes. Adjust seasoning with salt and pepper if needed. Sprinkle with fresh parsley.
  6. Serve immediately, spooning extra sauce and mushrooms over the steak tips.
