Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small lumps if desired.
  3. Add the melted butter, granulated sugar, and brown sugar to the bananas. Whisk vigorously for about a minute until combined.
  4. Whisk in the egg and vanilla extract until the mixture is smooth and uniform.
  5. Add the flour, baking soda, and salt. Stir gently until the flour is just incorporated; do not overmix.
