Description
An elegant, high-protein chicken salad made with creamy Greek yogurt, sweet grapes, and crunchy nuts. It is a make-ahead friendly dish that balances sweet and savory flavors without the heaviness of traditional mayonnaise.
Ingredients
- 3 cups shredded chicken (rotisserie or poached breast)
- 1.5 cups red or green grapes, halved
- 1/2 medium red onion, finely diced
- 1/2 cup feta cheese, crumbled
- 1/2 cup walnuts or pecans, toasted and chopped
- 1/2 cup fresh herbs (dill and parsley), chopped
- 1 cup plain full-fat Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey or maple syrup
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- If poaching chicken, season with salt and pepper and simmer in water or broth for 15-20 minutes until cooked through. Let cool and shred into chunks.
- Halve the grapes and finely dice the red onion. If sensitive to raw onion, soak diced onion in ice water for 10 minutes, then drain and pat dry.
- Toast walnuts or pecans in a dry pan for 2-3 minutes until fragrant, then chop. Chop fresh herbs.
- In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, minced garlic, salt, and pepper until smooth.
- In a large mixing bowl, combine shredded chicken, grapes, red onion, feta cheese, and nuts.
- Pour the dressing over the salad ingredients and gently toss to coat evenly without crushing the grapes.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled on a bed of lettuce, in pitas, or with crackers. Garnish with extra herbs if desired.
Notes
Toast nuts for better flavor and crunch. Soak red onion in ice water to mellow the bite. Use full-fat Greek yogurt for the best texture. This salad tastes better made ahead; store in the fridge for up to 2 days. Do not freeze as the yogurt and grapes will separate and become mushy.
