- 1 teaspoon (6g) Salt
- 1 teaspoon (5g) Baking Soda
- 1 ½ cups (360ml) Buttermilk
- 2 tablespoons (30g) Unsalted Butter, melted
- 1 tablespoon Sesame Seeds or Poppy Seeds (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×5 inch loaf pan generously with butter or non-stick spray, optionally dusting with flour.
- In a medium bowl, whisk together the flour, sugar, salt, and baking soda until evenly distributed and aerated.
- In a separate large bowl, whisk the buttermilk and melted butter together until combined. Ensure the butter is warm, not hot.
- Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula until just combined; the batter should be thick and slightly lumpy. Do not overmix.
- Scrape the batter into the prepared loaf pan and smooth the top with a wet spatula. Sprinkle with seeds if using.
- Bake for 45-50 minutes. If the top browns too quickly after 25 minutes, tent loosely with aluminum foil. The bread is done when the top is deep golden brown and a toothpick inserted into the center comes out clean.
- Let the bread sit in the pan for 10 minutes, then turn it out onto a cooling rack. Allow to cool completely (about 30 minutes) before slicing to prevent a gummy texture.

Do not overmix the batter to avoid a dense texture. Ensure baking soda is fresh by testing it with vinegar. Cool the bread completely before slicing to allow the structure to set. Store in an airtight container at room temperature for up to 3 days, or freeze sliced bread for up to 3 months.
