These homemade strawberry fruit roll-ups are a simple, healthy, and kid-approved snack made with just three ingredients: strawberries, honey, and lemon juice. They are chewy, vibrant, and perfect for lunchboxes or parties.

  • 2 cups (300g) fresh or frozen strawberries
  • 2 tablespoons (30ml) honey
  • 1 teaspoon (5ml) lemon juice
  • 12 tablespoons powdered sugar (optional, for tart berries)
  • Parchment paper or silicone mat

Instructions

  1. Preheat oven to 170°F (75°C). Line a baking sheet with parchment paper or a silicone mat.
  2. If using fresh strawberries, wash and hull them. If using frozen, thaw completely and drain excess liquid.
  3. Combine strawberries, honey, and lemon juice in a blender. Blend on high until smooth.
  4. For a smoother texture, press the puree through a fine-mesh sieve to remove seeds.
  5. Spread the puree evenly onto the prepared baking sheet, aiming for about 1/8 inch thickness.
  6. Place in the oven and dry for 1.5 to 2 hours, leaving the door slightly ajar to allow moisture to escape.
  7. The roll-ups are done when they are no longer sticky to the touch and feel leathery.
  8. Let the dried sheet cool completely on the counter.
  9. Roll the sheet up tightly and slice into strips using a sharp knife or pizza cutter.
  10. Store in an airtight container with parchment paper between layers.

Notes

Ensure the puree is spread evenly for uniform drying. If using frozen berries, make sure to drain excess liquid to prevent sogginess. The oven temperature should be low (170°F) to dry rather than bake. If your oven doesn’t go that low, prop the door open wider. These can be made with other berries like raspberry, blueberry, or blackberry.
