Description
A rich, creamy, and indulgent keto-friendly ice cream made with heavy whipping cream and sweetened condensed coconut milk. This no-churn dessert features toasted pecans and swirls of homemade salted caramel sauce for a perfect balance of sweet, salty, and crunchy textures.
Ingredients
- 2 cups heavy whipping cream (cold)
- 1 can (400g) sweetened condensed coconut milk
- 1 teaspoon vanilla extract
- ½ teaspoon fine sea salt
- 1 cup pecans (chopped and toasted)
- ½ cup salted caramel sauce
- ¼ cup sugar-free dark chocolate chips (optional)
Instructions
- Chop pecans and toast them in a dry pan over medium heat for 3-4 minutes until golden and fragrant. Let cool completely.
- In a large mixing bowl, whip the cold heavy cream on high speed until stiff peaks form.
- In a separate bowl, whisk together the sweetened condensed coconut milk, vanilla extract, and sea salt.
- Gently fold the coconut milk mixture into the whipped cream using a spatula until combined and no streaks remain.
- Stir in the toasted pecans and half of the caramel sauce (and chocolate chips if using).
- Spoon half of the ice cream mixture into a 9×5 inch loaf pan. Drizzle with some remaining caramel sauce.
- Add the rest of the ice cream mixture on top and drizzle with the remaining caramel sauce.
- Use a knife to swirl the caramel into the ice cream, creating visible ribbons.
- Cover the pan with plastic wrap or a lid and freeze for at least 6 hours or overnight.
- Let the ice cream sit at room temperature for 5-10 minutes before scooping to soften slightly.
Notes
Ensure all ingredients, especially the cream and bowl, are very cold for best whipping results. Toasting the pecans enhances their flavor. Do not over-mix the caramel swirls to maintain distinct ribbons. If the ice cream is too hard to scoop, let it sit out for 10 minutes. For a dairy-free version, substitute heavy cream with coconut cream.
