Description
Juicy grilled chicken skewers marinated in a sweet and smoky honey chipotle glaze. This easy-to-make appetizer or main course is perfect for summer parties and cookouts.

- 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- ½ cup honey
- 2–3 chipotle peppers in adobo sauce + 2 tablespoons sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons low-sodium soy sauce
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 2 tablespoons vegetable oil
- Chopped cilantro for garnish
- Lime wedges for serving
Instructions
- Cut chicken thighs into 1-inch uniform cubes and place in a large bowl.
- In a blender, combine honey, chipotle peppers (with sauce), apple cider vinegar, soy sauce, minced garlic, smoked paprika, and vegetable oil. Blend until smooth.
- Pour marinade over chicken and toss to coat. Cover and refrigerate for 30 minutes to 4 hours.
- If using wooden skewers, soak them in water for 30 minutes. Preheat grill to medium-high heat (400°F / 200°C) and oil the grates.
- Thread chicken onto skewers, leaving space between pieces. Reserve a small amount of marinade for basting.
- Grill skewers for 4-5 minutes on the first side without moving them to allow charring. Flip and brush with reserved marinade. Cook for another 4-5 minutes until internal temperature reaches 165°F (74°C).
- Remove from grill and let rest for 2-3 minutes before serving with lime wedges and cilantro.
Notes
Soak wooden skewers to prevent burning. Do not marinate chicken longer than 4 hours as the acid can break down the meat. Reserve marinade before adding raw chicken for basting; do not use used marinade as a sauce unless boiled first. Chicken thighs are preferred for juiciness over breasts.
