  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • ½ cup (120g) Greek yogurt
  • 2 tablespoons fresh lemon zest
  • ½ cup (120ml) fresh lemon juice
  • 3 tablespoons poppy seeds
  • 1 teaspoon vanilla extract
  • Powdered sugar (for glaze)

Instructions

  1. Prep your ingredients: zest and juice the lemons, set juice aside, and soften the butter to room temperature. Sift together flour, baking powder, baking soda, and salt in a medium bowl.
  2. Cream butter and sugar in a large bowl using a mixer on medium speed until light and fluffy, about 3 to 4 minutes.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, lemon zest, and half of the lemon juice.
  4. With mixer on low speed, add dry ingredients in three parts, alternating with Greek yogurt in two parts (dry-wet-dry-wet-dry). Fold in poppy seeds gently with a spatula.
  5. Pour batter into a greased 10-inch bundt pan, smoothing the top with a spatula. Bake at 350°F (175°C) for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool cake in the pan for 15 minutes, then invert onto a cooling rack. Once completely cooled, whisk powdered sugar with a few tablespoons of lemon juice to make a glaze and drizzle over the cake.

Notes

Use fresh lemon zest and juice for best flavor. Grease and flour the bundt pan well to prevent sticking. Let the cake cool completely before glazing. Start checking for doneness at 50 minutes to avoid overbaking. Leftover glaze is delicious on yogurt or fresh fruit.
