Ingredients

  • 2 large English cucumbers (about 600g), sliced into half-moons
  • 1.5 pounds ripe tomatoes (about 700g), cut into wedges or chunks
  • 8 ounces (225g) block feta cheese, crumbled
  • ½ cup (120ml) extra virgin olive oil
  • ¼ cup (60ml) fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Kosher salt and black pepper, to taste

Instructions

  1. Wash the English cucumbers and slice them into half-moons, about ¼-inch thick. Place them in a large mixing bowl.
  2. Wash and hull the tomatoes, then cut them into wedges or chunks. Add them to the bowl with the cucumbers.
  3. In a small bowl or jar, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, a pinch of salt, and black pepper until emulsified.
  4. Pour the dressing over the vegetables and gently toss to coat everything evenly.
  5. Cover the bowl and let the salad marinate at room temperature for 5-10 minutes to allow flavors to meld.
  6. Just before serving, crumble the block of feta over the top and gently fold it in or leave it on top for pockets of cheese.
  7. Garnish with extra black pepper or fresh herbs if desired and serve immediately.
