  • 4 large boneless, skinless chicken breasts (about 600g)
  • 1 tablespoon Italian seasoning
  • Salt and black pepper, to taste
  • 1/4 cup all-purpose flour (30g)
  • 3 tablespoons unsalted butter (45g)
  • 2 tablespoons neutral oil (avocado or canola)
  • 1/2 cup packed sun-dried tomatoes (about 60g), chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240ml)
  • 1/2 cup chicken broth (120ml)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon lemon juice

Instructions

  1. Pat chicken breasts dry and season generously with salt, pepper, and Italian seasoning. Lightly dredge in flour, shaking off excess.
  2. Heat neutral oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
  3. Reduce heat to medium. Add remaining 2 tablespoons butter to the pan. Once melted, add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
  4. Stir in chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
  6. Add heavy cream and stir. Simmer gently for 2-3 minutes until the sauce thickens slightly.
  7. Remove pan from heat. Gradually stir in Parmesan cheese until melted and smooth. Stir in lemon juice.
  8. Return chicken to the skillet and spoon sauce over it. Let sit for 1-2 minutes to heat through.
  9. Garnish with fresh basil and serve immediately.

Notes

For a gluten-free version, skip the flour dredge. For a dairy-free version, use olive oil, coconut cream, and nutritional yeast. The sauce may thicken in the fridge; reheat gently with a splash of milk or cream. Do not freeze as the dairy sauce may separate.
