A rich, creamy, and tangy chicken dish featuring sun-dried tomatoes and parmesan in a velvety sauce. This one-pan meal is surprisingly easy to make, taking only 30 minutes from start to finish, making it perfect for dinner parties or weeknight dinners.
Ingredients
- 4 large boneless, skinless chicken breasts (about 600g)
- 1 tablespoon Italian seasoning
- Salt and black pepper, to taste
- 1/4 cup all-purpose flour (30g)
- 3 tablespoons unsalted butter (45g)
- 2 tablespoons neutral oil (avocado or canola)
- 1/2 cup packed sun-dried tomatoes (about 60g), chopped
- 4 cloves garlic, minced
- 1 cup heavy cream (240ml)
- 1/2 cup chicken broth (120ml)
- 1/2 cup grated Parmesan cheese (50g)
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh basil, chopped
- 1 teaspoon lemon juice
Instructions
- Pat chicken breasts dry and season generously with salt, pepper, and Italian seasoning. Lightly dredge in flour, shaking off excess.
- Heat neutral oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
- Reduce heat to medium. Add remaining 2 tablespoons butter to the pan. Once melted, add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
- Stir in chopped sun-dried tomatoes and cook for 1 minute.
- Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
- Add heavy cream and stir. Simmer gently for 2-3 minutes until the sauce thickens slightly.
- Remove pan from heat. Gradually stir in Parmesan cheese until melted and smooth. Stir in lemon juice.
- Return chicken to the skillet and spoon sauce over it. Let sit for 1-2 minutes to heat through.
- Garnish with fresh basil and serve immediately.
Notes
For a gluten-free version, skip the flour dredge. For a dairy-free version, use olive oil, coconut cream, and nutritional yeast. The sauce may thicken in the fridge; reheat gently with a splash of milk or cream. Do not freeze as the dairy sauce may separate.
